Why do some pros go with a stiffer flex in their wedges and some go softer? What is the thought process each way?

It’s about feel and the numbers. Some take full swings with wedges where others always take 75%- 85%.
The additional info from Trackman Means they can get the feel the want as well as the spin numbers.
