Snowed out here but might be willing to drive this weekend to get a round in. How far south do I have to go?

Most of them are open.  Forest Park, Marine Park to name a few.

Really?  I think I've found something to do this weekend!  I've never played any course around there - is there one in particular I should check out?

If you're coming down the Hutch stop at Pelham/Split Rock.  If Split is open, that's the better course.  Pelham is wide open and had a couple of Par 4s that you might be tempted to drive.  They also have a couple that dare you to go over some trees and cut the hole by about 30 yards.

If you want to play the country's oldest muni, go to Van Cortlandt Park.  3 out of the last 4 holes are potentially driveable off the tee. However, if you miss right or left say sayonara to your golf ball.  Super risk-reward.  They also have two, 600 yard par 5s should you choose to play from the tips.

If you play either course during the week and don't drop extra balls, you can easily be done in less than three hours.
