How easy is it to change shafts on the ping s56 irons,and is worthwile changing to a regular shaft

Easy as any other shaft

I would say with the change if you are swinging a shaft that is too stiff

Easy peasy... lots easier to pull then the older Ping irons.

I actually have been playing around with the shafts in my set and changed them between X100, Px and C taper to see what I liked best.  It was very easy and no issues getting to the correct swingweight.  Just pull like you would from any other club head.
