Hardrock/Heavy Metal: Mike Portnoy. Not even a debate.
Rock: Neil Peart still is the mack daddy.
The late drummer for Avenged Sevenfold WAS really good, I am really getting into them now.
Mike Wengren of Disturbed is real solid too, not too flashy but provides a solid sound.

As far as drummers go; Shannon Lucas (ex-The Black Dahlia Murder), Dave Lombardo (Slayer), Danny Carey (Tool), Chris Adler (Lamb of God), Tomas Haake (Meshuggah), Joey Jordison (Slipknot)... Those would be my current favorites, all monsters on the kit.
There are many current drummers out there playing for bands that most people will never listen to that are amazing. I always was a metal head, though. I'll point you in a good direction if you're curious about the darker side of music.
If you want to throw it back to guys who once had it but have clearly aged and lost it; Lars Ulrich (Metallica), Neil Peart (Rush), Vinnie Paul (Pantera), Bill Ward (Black Sabbath).

I have to disagree with you on the "other craptastic disgrace put forth to the sheep" comment. I posted a link of some awesome music. Doesn't have to be defined by a genre. I am a music fan not just a metal/hard rock fan. If you are good at your instrument/vocals I can enjoy/respect your talent. Hell I like to listen to Marc Anthony here and there BUT my iPod is mostly hearing Disturbed/Avenged Sevenfold/Sevendust/Pantera/Shinedown/Godsmack. I listen for muscianship.
Godsmack formed in my backyard and those guys were rocking hard WAY before they got signed to a label so the "food for the sheep" label with them and the other bands is not a fair assessment. I have listened to Lamb of God several times and they do nothing for me, I know lots of people like them but they haven't "grabbed me".
