I am organizing our annual golf trip. In total we are playing 8 rounds  and have 8 guys who all like to wager a bit. Any idea for an 8 round match we can play? Most of the year we play match play, but we will be at some bucket list courses so we will be playing stroke play. We could do something as simple as the 4 high nets buy dinner for the 4 low nets each day, but it would be fun to come up something a bit more interesting. At the same time these course are pretty incredible so we want to focus on the course not the gambling (at lesser course we have done a Ryder Cup style team tournament)

Everyone predicts their own score, best estimate wins. A bet to cover all eight rounds rounds in total -- fewest double bogies or most most pars, or best scores on par 3s.

Caps are 4,6,8,9,11,11,12, 16

The 16 will be very dangerous, a former 10 so at times his 10 game shines through and his game is ideal for these course.

Everyone should predict the other 7 player's scores. Predicting your own score and betting on it can be a bit dodgy.

Maybe draw names out of a hat after the rounds each day. That way you try your hardest, not knowing who is going to end up on your team.

What about set up 2-man best ball teams?  Match the teams up according to ability/handicap and then separate the teammates into opposite foursomes.  One teammate makes a 4 on the first hole but his partner doesn't know since they're not in the same group.  You can give out points to each player based on their best ball score after the round.  Mix up the teams or keep the teams the same for all the rounds and have a leadeboard of the four 2-man teams.  You can bet based on the score each day... money, dinners, etc.  Then if you had a leaderboard maybe everybody throws in $x and the top team or 2 teams takes the pot.

That's a pretty good group.
I like the idea of best-ball as well.
Especially because of the group size - each player could partner with all the other players one time. This would cover the first 7 rounds.
For the last round you could do something different.
I like multiple payouts - so I would have skins, par 3 nearies, and team low net payouts per day. (The team members could split the skins & nearie payouts each day as well. Otherwise teammmates can tie each other on the skins and I personally don't like that.)

I would try to get a consensus and collect a couple hundred per man up front and have payouts for each round.
And as I mentioned, you could do something different in the last round/grand finale.
Good luck and have fun

match-play round robin format playing different guy each day accumulating points
after 7 days everybody has played each other

top 2 points after 7days -- play each other the last day etc. etc

could also do 7 days of quota and have it cumulative
last day top 2 play head-to-head etc. etc
