- grapevine municipal - 27 holes, and is good quality. can get slow on the weekends, but don't let it being a municipal scare you away. right next to cowboys
- bear creek - 36 holes, tight and lots of elevation changes. on southwest side of airport - maybe 10 minutes from the waterpark. i personally prefer the west over the east course, but both are good. its in the landing /take off pattern of dfw airport so the planes will be coming and going overhead.
- texas star - 18 holes. my favorite course in the metroplex and i think one of the nicer public courses in the metroplex. some holes are tight, and others open. some elevation change. great great course. southwest of the airport in euless, maybe 20 minutes at most from the water park.
- the tribute - 18 holes, replica of famous british open courses. pretty fun course. can be pricey, but if your playing during the week, shouldn't be more than $80.
there are a ton of courses in the metroplex. these are just a few i would throw out there

There are some good suggestions above.
Grapvevine Muni is right next door to Cowboys and is a pretty good track in it's own right. Texas Star is worth the short drive, it's is always in fantastic shape and a fun layout. One of my top 3 favorties in DFW.
Bear Creek is a beating. It's tight, right uner the airport (though all courses around there are around DFW) and seems to get dry and patchy every summer.
I'll make a pitch for my home course Bridlewood. It's only 10 minutes away away. I'd easily put it in the top 10 of public DFW courses. A fun course that's always in fantastic shape with great amenties. The rack rate is $70-$80..but if you go onto Golfq (Texas Star has Golfq deals as well) or get on a their e-mail list before the trip you can usually get on there for around $50-$60.
It was my year to host fantasty football last year. I wanted to keep everyone close to the airport for golf, hotel and all the activites. We played Texas Star and Bridlewood and they were all very happy with both courses.
BTW, don't get lured into Tour 18. It sounds great on paper, but it's a very poorly run course.
These are what I'd recommend close by. If you don't mind driving a bit Castle Hills and Tribute are also among the best to play on a visit....

RTJ jr. course - very nice. Depending on when you play it is $90 or under.

Grapevine muni is the best value out there, solid condition, interesting holes, muni price. One thing to be aware of is that you can't make a tee time unless you are a foursome on Saturday (or Sunday I believe). If you're a single or a twosome you have to show up and wait to get "worked in". I've never done it, so I don't know how it well it works.
Cowboys is fun to do, but way over-priced in my opinion. The greens are surprisingly slow, but you've got some elevation changes on a few holes that you'll find nowhere else nearby. Food and non-alcholic drinks are included and you can replay for free, so if you've got all day and can eat two meals and play two rounds it's starts to sounds reasonable, but its not a $200 golf course in my opinion.
Riverchase in Coppell is pretty weak, but if you're dying to play they sometimes have good week-day deals. Tight course, among neighborhoods. I'm not a big fan of the course, but would play in a pinch, for the right price.
Another, not mentioned by those above is Sky Creek Ranch in Keller, west of DFW airport (http://www.skycreekranch.com/). It's one of my favorite courses. Normally great condition, interesting holes and definitly challenging enough.

I drive by Sky Creek everyday on the way to work and play it often. It's always in GREAT shape. Texas Star is a little more "natural," and also in great shape.

Sky Creek is a nice one that would be worth it.
Bear Creek has been hit or miss for me, looks like it's in good shape from 360. It is a pretty tough course, so expect to need at least a B game to shoot well.
I love the layout of Tribute (replicas of famous UK/(Ireland?) holes), but last time I was there I think it would be hard to get in under $80.
Along those lines, Tour 18 is pretty good, but have to watch to be able to get under $80. It was recently reworked and has filled in nicely.
Texas Star wasn't bad, but I wasn't impressed for the price either. I'd have preferred Links at Waterchase, which if you want to venture down to I-30, then I'd recommend there. Hard layout, but really fun and reasonable price (~$50-60).
Cowboys is interesting, but IMHO over rated and over priced. Nice to play it once, but I was left feeling kinda cheated when I payed full price.
Don't know if they still have it, but got a room at the Gaylord for my Grandparents 50th Anniversary a couple years ago and got like a half price round at Cowboys for me.
