I've gone down there the last three years around the late March / early April timeframe and am hoping to get down again this year. There are lots of good golf courses to choose from, but some of my favorites are:
Deer Creek in Deerfield Beach
Plantation Preserve in Plantation
Emerald Hills in Hollywood
Crandon Park in Key Biscaine
Our first year there, all the locals suggested we make the trek up the road to PGA Village in Port St Lucie (about 1.5 hours away) that has three outstanding courses and it was well worth the drive. From my experience, lots of courses won't let you book more than a week in advance.
Courses can cost a lot more if you are from out of state. Get yourself a Sun Sentinel newspaper on Mondays (I believe - but it could be Tuesdays) as they have a number of coupons for discounted rates at courses. There are also some websites like Last Minute Golfer that are free to join where you can get tee times at a significantly reduced rate if you are ok waiting until the day before to make your booking.

Couple other courses in the Hollywood area that are decent tracks are Hillcrest and The Presidential.
Definitely look for coupons in the Sun-Sentinel. Palm Aire has some good rates in the late afternoon.
Three good courses that are in good shape, the Palms, Cypress, and the Oaks. The Oaks usually has
the best conditioned greens.
