That recipe is kind of similar to mine. You should try Everclear 190 proof as 190 proof is what they use in Italy. It goes down smooth and then gives you a jolt.
What is your recipe?
Why “cover loosely” to infuse? Won’t you lose alcohol to evaporation? I have the everclear and have been tempted to make it, but alcohol is enough sugar without all the sugar.

I use 15 organic lemons because that aren't sprayed with anything which you don't want because you're using the zest . I use a ceramic pot with a glass lid that seals tight. I put the lemon zest in the pot and add a liter of Everclear. I put the lid on the pot and I cover the glass lid with a towel and leave it in a cool darker room for 3 -4 weeks. When I make my simple syrup I use 6 1/2 cups of water and 5 cups of sugar although you can adjust the ratio to your liking. I strain the lemon zest from the Everclear and once the simple syrup reaches room temperature I pour it into the pot with Everclear mixture. I pour the Limoncello into 32oz and 16oz bottles with bottle caps and put them in the freezer. Ready to drink and enjoy when cold.

What I did when I first started making Limoncello. We know the owner, manager and bar manager at a local Italian restaurant and they're all from Italy. Two from Milano and one from Sorrento. I would bring my Limoncello to the restaurant to let them try it and give me feedback. Based on their feedback I would make adjustments to the recipe. I will let them taste my latest batch in a week or two

Grazie! Italy is one of our favorite countries to visit although we've only been to Rome, Florence, Pompei, Naples, Positano, Capri. We discovered Limoncello in Positano and it's one of my favorite drinks. I used to travel to Novara for business and I've stayed in Milano.

attended a family member birthday yesterday. good friend of theirs makes his own.
had a case in the trunk of his car and gave me a half liter bottle.
great flavor. he uses vodka though I'm not sure which brand.
got me thinking - I can do this.
would probably start with the vodkas I like to drink for a good base.
