If I were to soft step my wedges (8i shaft) I would cut the shaft to a standard wedge length?

Cut it to give you whatever playing length you want it to be.

Just in case you may not be aware, make sure you understand that the cut shaft length and playing length are not the same thing.  So if you want a 35.5" playing length, you don't cut the shaft to be that long.   Instead, install (or dry fit) the shaft into the specific head, measure the playing length of that and mark where you want to cut it  - measure twice, cut once :-)

The grip cap will add from 1/16" to 1/4" to the playing length but many builders will just measure out the shaft w/o the grip to 1/8" shorter than the desired playing length.
