I had a really bad fitting from a pro at a golf academy I attended in San Diego (Golf Academy of America). As a thank you they basically offer you any set from TaylorMade at cost + a fitting. The pro who fitted me had me fitted for -1/2 inch irons w X100 shafts. The clubs were terrible I would hit them low and often THIN, go figure I'm nearly 6 ft. I stepped them (took the 4 iron shaft and put it in the 5 and on down. I just bought a set of forged irons for S-300 because I noticed I am much more accurate and hit it a little higher with stiff shafts vs. X stiff. Does anyone think this is a good idea? Should I stick to X stiff. My driver is X stiff and I hit it about 285 on average and I can control the ball off the tee. Are s-300s going to gimme too much spin?

I’ll bight, I average similar to you at  about 280 with my Driver depending on the day and usually use a X stiff shaft in it. I play S300’s(-1/2” as well but I’m only 5’9”) in my irons without any issue at all, They’re a solid shaft. But the only way you will know for sure is to try it yourself :)

Your contention that a Pro at Golf academy of America fit a 6 foot tall male with -1/2 Length clubs. It’s either a lie or a misunderstanding.

I went to that school when it was San Diego golf academy in the 90’s and no one trained there or working there as a Professional instructor would do that.

If you are actually being serious I apologize.  Obviously you should not be playing shorter than standard clubs at your height and no one here can tell you what type of flex or variety of shaft you need from the scant information you’ve provided.

hitting the X stiff irons thin and low?

sounds like a loft issue, not a shaft issue.

Loads of info missing for any one to be able to truly help. Height is just a part of the equation. If you're 6' tall and have extremely short arms or have extremely long arms, that would put us in two different specs. With shaft flex, you obviously want to play what works the best for you. It's hard to give you advice without seeing more data on what each shaft is doing/not doing for you.
