I was playing a texas scramble and the ground was very wet, on a down hill par 3 i hit a high ball that drifted left and plugged in the wet soggy bit of the rough and i was unable to find it so we had to play the other ball that was further away, should i have dropped a ball at the estimated point of entry and played from there or is this not allowed even though we saw the ball enter but could not find it?

Sadly, the obvious answer is that it's a lost ball and that you would have to proceed as per the rules - in your case playing three from the tee.
As galling as it is to lose a ball a few feet from the fairway or the green because it has plugged, it's no different from belting one into the middle of a forest or waist high rough and losing it that way. The rules don't take account of how the ball was lost or whether or not it should, by rights, be easily found.
In the circumstances, you can (and probably should) come out with some language that would make a sailor blush, but you can't drop one in the vicinity of where it was lost and play two from there.
