Usually what is done is you calculate the respective course handicaps for the different tees they're gonna play and set the lower course handicap = 0. e.g. if the man is a 9 chcp and the woman of the ladies tees a 15, that's a 6 shot difference. As per the 75% rule the man would have to spot the lady 4.5 = 5 shots for the 18 holes.
IMHO match plays of men vs. women should outlawed.
I had to play my first round match of our club match play championship vs. a 14year old girl. On every teeshot she drove it past me by at least 20y...WITH HER 3W!!! I was even thru 7 and a mere 1up, with 3 more holes to come where she had one stroke on me. It became clear very quickly I stood no chance...

although being a 6 hcp, I do have a couple of bad holes every round, and with those she quickly was 4 up with 4 to play...go figure. Well, there's always next year...
